Negroni Sbagliato Recipe: Campari, Vermouth and Prosecco

A Negroni Sbagliato replaces the gin in a classic Negroni with sparkling wine. Campari supplies bitterness, sweet red vermouth brings herbal sweetness and Prosecco adds bubbles. Our version uses one part Campari, one part vermouth and two parts sparkling wine.

Negroni Sbagliato with ice and orange on a silver tray

Ingredients for one drink

  • 3 cl Campari
  • 3 cl sweet red vermouth
  • 6 cl chilled Prosecco or dry sparkling wine
  • Ice and an orange slice

How to make a Negroni Sbagliato

  1. Fill a large wine glass or lowball glass with ice.
  2. Add Campari and vermouth, then stir briefly to chill.
  3. Pour in the sparkling wine and stir gently to combine. Do not shake.
  4. Garnish with an orange slice and serve while the drink is still sparkling.

Equal parts or more Prosecco?

The 3:3:6 cl recipe above gives the sparkling wine more room. An equal-parts version uses 3 cl of each ingredient. Both are useful starting points: compare the balance of bitterness, sweetness and bubbles to find your preference. Chill the wine before mixing.

Why is it called Sbagliato?

Sbagliato means “mistaken” in Italian. The well-known origin story credits Mirko Stocchetto at Bar Basso in Milan in the early 1970s with picking sparkling wine instead of gin. The name stuck, and the variation became a cocktail in its own right.
